Determination of Ascorbic Acid in Soft Drinks
Ascorbic acid is added to fruit juices to restore nutritional values lost during processing. It helps maintain the color of the product and ensures stability thanks to its antioxidant properties.
Method
Sample treatment
Degas using the ultrasonic bath (code 222062) before taking the sample.
Principle of the test
Ascorbic acid is brought into contact with a colored complex in an alcoholic solution and oxidizes, decolorizing the complex. The decolorization, measured at 520 nm (end-point), is directly proportional to the concentration of ascorbic acid in the sample. The result is expressed in ppm.
Calibration curve
The calibration curve of the CDR DrinkLab system, carried out using HPLC as a reference method, confirmed excellent linearity of the system throughout the measurement range.
