Determination of pH in Fruit Juices
Measuring the pH in a fruit juice is important to ensure its quality, safety and stability. In addition to influencing the taste, pH affects the preservation of the product and the prevention of the growth of harmful microorganisms. Method
Sample treatment
The sample must be centrifuged (code 222061) before the analysis.
Principle of the test
pH value determination is made through a colorimetric acid-base reaction in which a chemical compound, added to the matrix to be analyzed, causes a variation of the coloration. The magnitude of the coloration, measured at 520 nm is correlated with the pH of the sample.
