Determination of Starch in Plant-based Beverages
Starch is a fundamental component of cereal-based plant-based beverages, as it represents the main source of complex carbohydrates. During processing, it is partially transformed into simple sugars through enzymatic hydrolysis, contributing to the natural sweetness of the product. Its quantification is important to control the effectiveness of the process, ensure correct consistency, prevent physical stability problems and provide useful information for nutritional assessment and labeling.
Method
Sample treatment
The sample must be centrifuged (code 222061) before the analysis.
Principle of the test
Starch reacts with a solution of stabilized iodine, producing a violet coloring, measurable at 620 nm in end point.
Calibration curve
The calibration curve was made using samples with known starch value. The curve trend confirms the excellent linearity of the system over the entire measurement range.
