Determination of Total Acidity in Fruit Juices
Measuring the acidity of fruit juices is essential to ensure taste, quality, and safety. Acidity influences flavor and contributes to the product’s stability over time. With CDR DrinkLab, it is possible to analyze Total Acidity quickly and easily through photometric reading, avoiding the traditional titration at pH 8.1 required by the reference method.
Method
Test type: End Point.
Testing time: 1 minute.
Analysis sessions with multiple samples are possible up to a maximum of 16 tests for CDR DrinkLab.
Sample treatment
The sample must be centrifuged (code 222061) before analysis.
Principle of the test
The total acidity reacts with a proper chromogen to decolorize it. The magnitude of discoloration, measured at 578 nm, is proportional to the total acidity value in the sample.
Calibration curve
The calibration curve of CDR DrinkLab, obtained using reference methods, confirms the excellent linearity of the system over the whole testing range.
